Frequently Asked Questions
What is gluten?
Gluten is a protein found in wheat, barley, and rye. It is this protein that helps with the elasticity of the dough that gives baked goods the textures that we all have learned to love so much. Gluten protein may be found in an array of products from food to beer to beauty products.
In recent years, millions of people around the world have developed Celiac disease, intolerance to gluten and gluten allergies/sensitivities. For them ingesting foods containing gluten can cause an immune response that inflames and damages the walls of the small intestines, sometimes causing symptoms that include abdominal cramping, chronic fatigue, depression, and many that are much more serious. So far, avoiding this protein has been the only solution found in the medical field to prevent against future damage from the disease/sensitivity.
